I love zip-loc bags. They represent freedom. They make leftovers and lunches better. It helps create make-aheads-to-make-dinners-easier. This is not an advertisement. I sincerely cannot remember how I functioned in the kitchen without them.
So, for those of you that might be, um, time challenged (like me); this one's for you.
Notice there are 2 cookies in a regular sandwich zip-loc.
Then all of those little baggies go into a FREEZER gallon size zip loc.

TIP: I keep a magic marker on top of the fridge. Out of sight, out of mind. No one carts it away because they can't see it, but I know it is there. Believe me, if it worked with my large housefull it will work for you too.
TIP: Write on the gallon freezer bag with a permanent marker BEFORE filling it up with cookies.
The whole point is that if you make a GIANT batch of cookies and freeze them right away, you have happy lunch eaters, and you are not tied to the cookie scoop every few days. When they are in their own little individual baggies it is really quick to unzip the bag and zip it back up; less temptation, less chance of crumbled stuck together cookies, and you know in advance exactly how many lunches worth of cookies you have.........happy munching!

Tonight I made Green Chile Verde Chicken Enchiladas.
They are a labor of love.
I just don't want to perform that dance again for awhile.
So, while I was blackening all of those tomatillos and different kinds of chilies, I just doubled the recipe for the sauce (it does not double the time).
While The enchiladas were happily bubbling in the oven, I danced my way over to the freezer and deposited this little gem!
The next time we are in the mood for mexican, all I have to do is pull out some leftover chicken, grate the cheese and have Randy stop for some fresh tortillas on his way home from work.
